When looking for a place to stay when visiting The Vale of the Usk your first thought should be of The Priory. This hotel and restaurant is the perfect setting to unwind, enjoy the best of locally sourced cuisine, and have a truly memorable stay in the historic town of Caerleon.

Can you tell us a little history of yourself and the business?

The Priory Caerleon opened in 1996 and is a family owned and operated business. We are a restaurant with 27 bedrooms, focused on delivering high quality food and service in a beautiful yet relaxed environment.

We also have a sister restaurant, The Old Custom House (www. theoldcustomhousepenarth.co.uk) , which offers the same high quality food and service, with stunning views overlooking Penarth Marina and Cardiff Bay.

What kind of features can we expect to find within the hotel?

The Priory is set on the site of a 12th century Cistercian Monastery and we are fortunate enough to retain a number of the original features throughout the building. Over the years the Priory has been home to a monastery, convent and private residence to a number of notable families; all adding their own architectural touches to the building and its 2 acres of grounds which have provided the foundation of the rich tapestry of features and beautiful gardens we are lucky enough to have today.

Our restaurant is built around our display counter menu, a concept started by the company founder, the late Mr. Martinez over 40 years ago in Cardiff. We love our display as we have real pride in the quality and freshness of the produce we use, and we like to take the opportunity to show it off to our guests whilst allowing them the opportunity to hand pick the precise cut of meat or fish they would like to eat.

Our bedrooms are set to reflect the environment offered downstairs in our restaurant. With comfort and a great nights rest being the primary aim in beautiful, relaxed, surroundings.

Can you give me a quick rundown on the restaurant?

Our restaurant concept is slightly different to most, in that we don’t have menus on the tables as such. We operate on our display counter menu concept, giving guests the opportunity to hand pick their desired cut. Our counter in reality doubles as our menu, allowing us to offer the very best, ever changing, seasonal produce to our guests in a visual way.

What sets you apart from similar hotels and restaurants?

There are many very good restaurants and hotels in and around Wales today, so everybody has to work to very high standards to survive. We feel our strength is in the fact that we are family owned and operated and our passion for good food, drink and hospitality is something that is in our blood. We welcome guests into our hotel and restaurants as we would our home and we hope this is a feeling that comes through during their time with us.

What are your future plans for the business?

As with all businesses, we are always striving to improve and never stand still. We have done a lot of work on the grounds and building over the last 12 months, most unseen but very necessary with a building of this age, and have many more plans for the future in the pursuit of improving our guest’s experience.

Our goal is to create an environment where our guests can come, relax, have and enjoyable experience focused on fantastic food and wines. The Priory is the perfect setting to unwind, enjoy the best of locally sourced cuisine, and have a truly memorable stay in the historic town of Caerleon.
